Good knife, comes dull however. Figure once I put an edge on it like my other knives in this steel, it’ll be wicked sharp. The loss of one star is for the dullness since I know just how sharp these should get.
For reference, my opinion on what is sharp usually tends towards something I’ve noticed most people find to be outrageous and that what they call sharp I call dull. A sharp knife should darn near try to cut to the bone on your index finger with a slow and barely touching draw against the edge. The knife came dull enough that I can do this and not even split the skin.
That said, at this price, if it’s only going to cost me some time sharpening, it’s a great value for the money. Besides the dullness, I’m pretty content with the product and find nothing else to be an issue. Feels well designed and is a great addition to my collection of knives that I put to serious work.

This is the best filet knife I’ve had in a very long time. The balance is excellent and it really holds an edge. I rarely have to hone it. I highly recommend this product, but please be careful. It’s very sharp.

I like everything about this knife, but it does tend to get a little slippery in use when cutting somethings. Other than it it’s perfect. Good blade, easy to sharpen and gets into places you can’t get into with a regular knife.

Looks great and holds a sharp edge. The problem I have with this knife is the handle design. I’m not sure if this is just my knife or not, but there is a line where the handle meets the metal where your hand is supposed to be that is not smooth. I carved 3 whole chickens and my skin began to feel irritated as the side of my finger was rubbing into the edgy part of the handle.
If your hands are at all slippery from oils, fats, or any kind of substance that will make your hands slippery, I’d stop using the knife immediately and wash your hands, as the handle texture does not have a good grip for such cases. Now of course, wearing gloves pretty much render all these problems null and void, until your gloves get too slippery.
When it comes to carving specifically, I’ll probably just stick to the cheap plastic handle carving knives that I’ve been using before in the future. Doesn’t quite look all that great, but is comfortable, has a steady grip handle in any situation and does the job just fine.

I love this boning knife. However shorten it to 5 inches it would be much more maneuverable.
