It feels nice in the hand, it looks nice too, but to be honest, the 20 buck throw away I bought 3 years ago feels better and cuts better. I wish I could order that knife again but they don’t make it anymore. This one will make a great backup when or if my $20 buck starts to fail.

I have started my attempt at making sushi rolls. The knife works great Cuts through pretty much anything I need it to. Cleaning the blade between cuts makes it a lot easier to work with.

This steel is from Japan, and it’s made respectfully into a beautiful work of art by Chinese craftsmen. I enjoy owning and using this knife. I would buy again. You have to get the exact right lighting & angle of view to see the ever so slight imperfections in the edge of blade. Does not affect cutting.
