I do 5 – 10 pounds of sausage at a time, so the 11 Lb. / 5 L Sausage Stuffer is perfect for me. I think the larger size with a longer holding tube would be a little more challenging to clean unless you have long reach. My first practice run was with 5 lbs. of meat, and I couldn’t he happier. Instead of taking a couple hours and a lot of hard work with my old jerky shooter and/or handle press stuffer, this took about 20 minutes; which was great for my first time. I did three long continuous links, and then coiled them for laying on the smoker racks. At most I had 2 cups of meat left in the stuffer elbow and tube, which I formed into balls, flattened out and then put them in the smoker too. Was also impressed with air relief valve, and no meat came back up between the gasket and holding tube. Couple things to bear in mind, if you let go of the crank handle when there is still pressure on the meat, the handle with rotate back at you, so if you have to let go, just back it off 2 turns. Also, when turning the crank on the up-stroke, the whole unit will want to tip back, so have a helper hold it down, or I used a couple of large spring tension clamps. Wish I had gotten this years ago.

We’ve made sausage in the past with our KitchenAid mixed. It works, but it’s not ideal. The mixed is tall, so we’ve put a plate on top of a bowl so the sausage won’t hang to much. Worst yet the mix tray is so small that you are constantly adding more sausage mix and you have to keep it packed so you don’t get air. Like I said, it works, ,but it’s also kind of a pain. Any one who has stuffed sausage with a KitchenAid will know exactly what i am talking about.
Fast forward to this stuffer. OMG. It’s like night and day for making sausage. First I put all 10 pounds in the tube at once. Load and done. No constantly adding. Feed the casing on the tube (when it’s wet it’s easier), crank and you are making sausage. Couldn’t be much easier.
Being able to load 10 pounds at once has huge advantages. Once with the KitchenAid I made potato sausage which tends to be sticky in the first place, then you end up taking WAY more time to feed it in the mixer, it gets warm and oh what a mess. I ended up only stuffing like half of it.
With the Hakka stuffer, our first try, we made 10 pounds of chicken/cherry/blue cheese sausage and it couldn’t be much easier. We were a little rusty, so getting back into the hang of working with the casings took a bit, but it didn’t take long to get in a rhythm and it couldn’t have worked better.
The 11 pound unit is HUGE. I knew it was going to be big, but it did surprise me. But we can do a little or a lot. Since we often make 10 pounds at a time, it’s the perfect size. Once we use it a few times, i am sure we will be turning out sausage quickly and easily.
Also like that it comes with so many different funnels. You can make just about any kind or size with this one.
This unit is heavy duty and well built. For the most part it is real easy to clean. It comes apart really easy and simply wash it off. The ONLY sightly negative I have is that I don’t see any way to remove the plunger part so you can clean it. I ended up straddling the unit over the sink to wash that part. Not a deal breaker and not worth taking a star off. Maybe some one can tell me how that pat can be remove, if it can.
There was not much to putting this together, not many parts. The instructions were not much, they could be improved.
One important tip, while you are stuffing, be careful if you let go of the crank handle, it almost got me in the face a couple times. Just FYI.
I am very happy with this purchase, would purchase again without hesitation. Though I doubt I’ll need to replace this unit in my life time.
If you make a fair amount of sausage and do it with something like a KitchenAid mixer, do yourself a BIG favor and get this. You will so glad you did.

We started making homemade Portuguese Sausage for about a year now, trying new recipes for the BEST and finally decided it was time to try a sausage maker. That was the best idea! Streamlines the sausage making to minutes – compared to at least an hour – don’t want to go back to the old way of using the sausage attachment to my Kitchen Aid (although I love my Kitchen Aid too).
One suggestion – the sides of the sausage maker are a little sharp so be careful carrying/holding it on the sides. We will be making a change to that for future sausage making moments! Otherwise, great sausage maker!

This has been a great investment. I used to hand grind/stuff sausages and broke down and bought this. I normally bang out 15#’s of meat in no time. Takes me longer to tie the sausages than load the casing and crank it out.
Only complaint I have is the leftover meat in the large elbow at the bottom. I wish it came with a pusher to help get that extra half pound of meat out of there.

Works well. Easy to control the amount coming out of the tube. Problem is it leaves a lot in the bottom and spout when fully depressed. It isxx CD a pain to clean. But overall does what it say it does.

This is a very good quality stuffer. I like the large drum and can hold almost 10 pounds of meat. The twin gears make retracting the plunger very easy and fast. I have used it on large and very small casings and everything worked perfectly. Because of its larger drum size, I did need to clamp the stuffer to my counter so the stuffer would not tip over when I was cranking on it. The only suggestion for improvement is to smooth off the sharp edges of the frame of the stuffer. However, they are positioned so that my hand will not scrape them when using the stuffer, but I would grab those edges when moving the transporter from table to storage.
I recommend this stuffer. It is well-made and works well.
