    We were disheartened by the texture and taste of the bread that was being produced when we first bought this machine. We were on the verge of returning it when I decided to try recipes other than the ones in the booklet provided. My friend had a 20 year old Panasonic bread maker and recipe book so I copied some of those recipes and SUCCESS! Amazing taking bread that we make every other day. Wonderful machine!

    The recipe (place in pan in this order):
    1-1/2 cups warm water
    2 Tablespoons of margarine or butter (room temperature)
    3 Tablespoons of sugar
    1-1/2 teaspoons of salt
    3-1/2 cups of flour (any combination of white, whole wheat, multigrain)
    1-1/2 teaspoons of instant bread maker yeast

    Put on 1.5 lb loaf setting

    Purchased this wonderful bread maker about 6 wk ago and just love it. I bake about 2-3 times aweek and no failures so far however be warned thr 4-5 cup flour recipes are huge, definately family size, even with whole wheat flour. I never use the vital gluten as our Canadian wheat is great and gives good rise always. The only door stop loaf so far was the recipe in the book containing cinnamon which kills yeast apparently. I mixed it in the flour with all the other dry ingredients, guess that was not a good idea! I always add yeast last on top of dry ingredients and warm water and butter first.
    The top of every loaf is always nicely browned on every setting however the sides and botton are a little too brown even on light setting basic recipe for white bread, perhaps due to too much sugar or whole milk powder? The whole wheat setting for crust is auto preset and bottom and sides crust are very dark but still wonderful high loaf bread and this too was a high sugar bread.
    The winner in the preset loaf where crust cannot be adjusted is the french bread crusty loaf…….a beautiful light airy bread, taste excellent and perfect golden crust all around but it had no sugar or milk powder, just oil and salt any maybe that is why, so still have more fun experiments to try it seems.
    The pan is surpprisingly light, with very slick coating. Single paddle and pan shape and kneading very thorough, I am impressed and loaf shape is quite high semi rectangular deep enough so no stick to lid issues.
    Anyway the machine works great, the paddle only lays partly prone due to dough caught under the paddle , makes a dent in bottom of loaf but that is still better than the machines that tear a huge hole when paddle is left in to bake. However there is a beep after last knead so you can remove paddle if desired.
    The add in dispenser works fine and goodies get mixed in properly.
    The dough is extremely well mixed and finished loaf shap is smooth unless the dough is too dry then thhe top may be lumpy.
    I am really delighted to have a completely hands free bread making machine and enjoy it very much. I did a lot of research before buying and am pleased with my choice of Breville.
    I have 2 other Breville products and found them very good, heavy duty also just like this bread machine.

    My wife and I want to love this bread maker. We’ve baked about one loaf of simple white bread per week since we bought it three months ago. The bread quality is great, tough and chewy on the outside without being stale, great for anyone looking for something that DOESN’T taste like Wonder bread.

    Two negatives, one of them a showstopper: the bread is difficult to remove from the pan, and, rivet corrosion inside the pan. I sort of expect the bread to be difficult to remove, so that’s a minor inconvenience. The rivet corrosion is nasty though (as pictured). We wash the pan by hand using warm soapy water and a soft sponge. I’m not sure what the problem is for sure, but it seems similar to what happens when you have two metals against each other with an electric field across them. If that’s the issue, then I can’t recommend this device… metal powder being mixed into your bread? Not good.

    I’d like to offer insights not already covered by other owners:
    Like other Breville appliances, this bread maker uses a multi-function rotary switch for navigating and changing the values of various settings. This is a faster, easier method than keypad buttons used on other machines. This machine has a high level of features and settings, so this choice of interface really shines. There’s also tactile metallic buttons that perform single purposes, (Ex: Oven light), and their layout and size make them unambiguous. This layout, and the large, easy to read black-over-white LCD display are friendly to old duffers like me who don’t appreciate scrambling to find our glasses to use an appliance. Also, the important buttons have an illuminating halo ring that changes color to indicate they are, or are not available for use depending on the present state of the machine’s cycle. Another clever detail.
    A word on the folding paddle angst some owners have expressed:
    Complaints relate to seizing, cleaning or aesthetics of the ‘hole’ in the bottom of the loaf . . really?
    I lube the thing with olive oil prior to use. I also place a cup of hot water in the baking tin w/paddle after it cools to soften remnant dough, then use the edge of a common dish brush to clean away baking remnants. Cleaning takes seconds not minutes – far less time than complaining, and if a small hole or gash in the bread your about to digest troubles you, consider meditation or a therapist.
    Things to like:
    1. Widest range of loaf sizes of any machine I could find.
    2. Oven light is awesome – not critical, but a really thoughtful luxury.
    3. Fruit/nut dispenser a plus.
    4. 850watt rating – most powerful machine I could find.
    5. Fixed and folding paddles provide for a wide range of uses.
    6. Greatest number of custom program settings and memory for personal recipes.
    Lastly, and surprisingly important,
    7. The manual/recipe book is a real quality item. Thick, glossy pages, spirally bound so you can open to a recipe and it lays flat. It is made to be in a kitchen. Most other manufacturers completely cheap out at this point. The many recipes are a great starting point for spectacular personalized custom loafs.

    A note on price: Welcome to inflation. I had to pay $300. Who WANTS to do that? I didn’t, and first I bought a KBS import special with a fancy glass top for $150. But on only the second loaf, that machine’s wimpy motor started to make unhealthy sounds and got returned.
    On the other hand, my 6-7 year old Breville espresso machine, juicer, and countertop oven function as perfectly today as they did in 2015. Coincidence? Maybe, or it shows value for the prices paid – who’s to say.
    In the end, performance and longevity are more important to me than low price. Once the money is spent, it’s easy to forget the pain as long as the product excels year after year.
    O.K., time for a perfect crusty dill rye for Reuben sandwiches. It’s a ripper 🙂
    P.S. If you haven’t tried Bob’s Red Mill Artisan Bread flour, there’s a real pleasure waiting for you.

    Very dissatisfied with this, my third bread machine. Like other reviewers, I have experienced metal flakes being scraped into the dough, both from the bottom of the bread pan and the spinning/ kneading attachment. I’ve had to toss out bread because of this and now it’s basically unusable. I’ve had cheaper bread machines in the past that never did this. I hope that Beeville will replace the item, but since I took to long to report this, it may not be the case. Will update when I find out for certain how the customer service is.

    The Breville BBM800XL (hereafter called “the 800”) is an elegant bread maker. It has good looks for sure. Mine arrived with no cosmetic defects and was well packed to survive the journey. The brushed steel housing is a bit thin and flexes with just a little pressure. I would think for the price it could be a bit more substantial but that’s just my opinion. I have other Breville appliances and this machine is a nice match.

    I have been baking bread the old fashioned way for at least 40 years. Although the old way is still best, a bread maker is often a better alternative for me than turning on the oven and heating the entire kitchen on a summer’s day.

    I would like to compare the 800 to the Zojirushi BB-PAC20 (hereafter called “the Zo”). These are not the only bread machines in town, but I do have experience with both. I think people looking for a high end machine would like a comparison.

    This Zo is a bit heavier. It feels more solid than the 800. The Zo sits lower and is a bit wider. The 800 can wander around while it kneads. This can be a disaster if you are not prepared for it. I found that if I use a damp rag and wipe the feet clean as well as the counter top beneath it that it will stay firmly in place. Things should be clean in the kitchen anyway, right?

    My 800 worked fine right out of the box. My first two Zo’s were duds. Briefly, there was a bad noise problem with two units. The third one works properly. Thanks to Amazon for helping with this.

    I suppose the main question to answer is how well do these two machines bake bread? I think the Zo is the best performer. Bread from the Zo is evenly browned and well formed. The Zo has a heavier bread pan than the 800. The 800’s loaf is a bit dark on the bottom when set for “medium” crust. It turns out as medium at the top and dark, but not burned, on the bottom. The Zo’s two-pound loaf is of “normal” dimensions and fits my bread slicer. The 800 is a wider loaf about 5-1/2″ inches wide. The Zo is a bit short of 5 inches wide. The Zo can make a tall 2-pound loaf, though, whose slices do not really fit a normal toaster. They stick out an inch in my Breville toaster. So those are a job for a toaster oven to toast.

    After using the 800 a few times, I found there to be absolutely no problem with keeping the folding paddle clean. When the pan cools I fill it with warm water and a drop of detergent. A half hour later the paddle is easy to remove from the pan. (I do the same soaking routine with the Zo.) I use a brush to scrub out the paddle, rinse, and that’s that. I wish the Zo had a substantial paddle like this. With care, this paddle should definitely last and not wear out around the shaft like the the Zo’s paddles.I believe that if the paddle is ever put away without a thorough cleaning the dough inside the slot will harden and cause a problem. So once again, just keep it clean as you should be doing anyway.

    The 800 is not a quiet machine. The pan is only held down by gravity where the Zo locks into place. While kneading the 800 emits slamming sounds. Since it only has one relatively large paddle, the dough ball tends to get slammed around. It is louder than a properly working Zo. This was disappointing since so many reviews said the machine was quiet. The Zo tends to keep the dough more in place while it kneads because it has two paddles. On the other hand, one defective Zo I had was the noisiest bread maker I’d ever heard and I returned it.

    It is tricky to remove the hot pan from the 800. It has only a flimsy thin wire handle that flops from one side to the other when you try to grasp it with a pot holder. This handle is about as thick as coat hanger wire. It doesn’t latch in a straight up position. It is really hard to get a pot holder or mitt onto it when it is lying down flat in a hot machine. I use tongs to assist in getting the handle up a bit so I can grab it. Even then, I always manage to burn myself. True, the lid could be left open for a long while and let the thing cool first. However, I like to remove the bread from the machine when it’s done and not let it soak in the heat. The Zo has two substantial handles which make it supremely easy to remove the pan. Just rock it toward you so it unlatches and then pull it out of the machine. No drama at all.

    The 800 control panel puts the Zo to shame. It is head and shoulders above the Zo. It is easy to see the settings. It works differently from the minimalist panel on the Zo, but not in a bad way. I find it easy to operate. I think it is the best feature of the 800.

    The 800 has an excellent interior light. Too bad that most of the time the viewing window is obscured by condensation so that you would have to lift the lid to wipe it clear to see. That kind of limits the usefulness of the light since you’ve got the lid open.

    The Zo pauses automatically whenever the lid is lifted and restarts automatically when the lid is closed. The 800 does not care if the lid is open. I just keeps on chugging or baking away. If you want to pause the 800 you push a button. Tie score on that one, I’d say.

    The dispenser works but I don’t use it. You will hear it noisily pop open near the end of the first knead cycle whether you are using it or not. The Zo has no dispenser.

    The 800 emits beeps that are inaudible to me. The frequency is too high for my old ears. The Zo has lower pitched beeps that I can hear if I am in the same room with it.

    The 800 has handy posts at the back to allow wrapping the power cord neatly out of the way. The Zo does not have any kind of cord management.

    Both machines have delay start. The feature is nicest on the Zo where you have to do no head math at all to know when the delayed start bread will be ready. The 800 lets you set the amount of delay and it is up to you to figure out at what time your bread will be ready.

    The 800 gets much too hot on the outside while baking. If you should touch it you will quickly pull your hand away in pain. Strangely, the lower 3 or 4 inches of the skirt stay cool so you can safely grasp the machine and take it to another place after baking. The top is still very hot so care is still needed. The Zo seems better insulated, keeping the heat inside. The Zo only feels hot if you touch the view window. (Trust me, it’s hot!)

    The Zo comes with a colorful recipe book with large type. I like it by far over the smallish monochrome book that comes with the 800. I especially like that it describes exactly what each program (Zo calls them “courses”) does and spells out the length of each cycle and its steps by using a little graph for every group of recipes. Very handy. The 800 pretty much omits this type of information. It does explain the limits of the custom programs but you don’t really get to know the workings of each program. The 800 has a much wider customization range than the Zo. This feature may be very important to some. I am OK with the limited variations available on the Zo.

    The 800 is a nice machine but I do favor the Zo. I like the even baking of the Zo and I like the more normal size of the loaf. I like that the Zo has two paddles. I can only opine that I think it mixes better. It takes the 800 quite a while to bring the dough together while kneading. The Zo is more thorough, quiet, and faster. Overall, I see no real problem with either machine in this regard. I do think the 800 has to work a lot harder than the Zo to mix things up effectively with only one paddle and perhaps that is why it is noisier.

    As I’ve said I have other Breville appliances. I have found their customer service to be helpful and genuinely concerned when I’ve laid a problem at their feet. Zo, on the other hand, has a somewhat arrogant and off-putting tone in their response to questions. Zo also seems to have terrible quality control. It took me 3 tries to get a machine that works.

    You will not be disappointed if you buy the 800. The paddles are really not a problem if you care for them. I don’t know why they are an obsessive target of condemnation in the reviews. It bakes good bread and it is very versatile. As I’ve said I happen to prefer the Zo by just a little bit. It mixes and bakes a more attractive loaf. I must caution, though, that in my experience the likelihood of getting a defective Zo are high. Be prepared for disappointment if you order one. However, Amazon will make it right if you want to return it.

    How about for gift giving? Both are good choices but consider that the Zo comes with a nice booklet and an instructional DVD. If you are giving to a novice baker, this could be helpful. On the other hand, a Zo probably needs to be checked out before you give it as a gift or you may cause disappointment. It’s sad that I can’t say otherwise, but I had to return two already. For the least fuss, I’d say the 800 is the best bet. It looks nice and is maybe less likely to be a lemon. As always, these are just my opinions. I don’t consider myself biased either way, these opinions are borne from what I have experienced.

    I would rate the Zo at 3 stars. I give it only three stars because although it bakes great bread it caused me a lot of grief with poor quality. Had I not had quality problems with the Zo I would have given it a 5 star rating.

    I’ve made probably close to 50 loaves of bread in a few months and it just amazes me how great this maker is. I had another brand before and it didn’t even come close to comparing it to this one. Yes, it’s a bit pricey but well worth it. I haven’t had any issues with the paddle and it’s easy to take apart and clean. I take very good care of the maker and it hasn’t let me down yet. I really should do up a video on how to clean the paddle as it seems that some people are having issues with it. If you’re going to spend a few extra dollars on this make sure you treat it well. You only get out of it what you put into it.

    I love that it makes horizontal loaves and the bread is easy to remove once baked. I use the 2 lb size and after I take the loaf and cut it straight down the middle then flip each half on it’s side and cut the slices…you get two loaves of bread doing this.

    I’ve experimented with making various flavors and it always comes out amazingly delicious: Use the directions for the 2 lb setting and add the following after all the ingredients are in:

    -Cheese Onion Bread: Add 1/3 cup grated old cheddar cheese and 2 tablespoons dried Onion Flakes
    -Parmesan Basil: Add 1/3 cup parmesan cheese and 1 tablespoon Basil
    -Bacon Cheese Bread: Substitute butter in recipe with the same amount of bacon grease and add 1/3 cup
    grated cheddar. Add 1/4 cup bacon bits (fresh cooked it the best)
    -Parmesan Garlic Onion: Add 1/3 cup parmesan, 2 teaspoons each of garlic powder, onion powder,
    oregano and basil

    Make sure you read the how to care portion of the manual and follow it. I’ve read some of the reviews and it seems that some people have are not following the clear instructions they give you. At that point do not use those reviews to make a decision on whether to buy it or not. They are completely invalid.

    I traded up from my old Breadman Ultimate, whose non-stick coating finally wore off. I purchased this Breville despite many critical comments about its performance and the company because its configuration seemed very similar to what I was used to, and because of the large, illuminated blue display, which all the others were lacking. I also definitely wanted an automatic fruit and nut dispenser, which even the storied very expensive Japanese bread maker doesn’t have. I made one loaf of my own recipe bread with almonds, Brazil nuts, macadamia nuts and cherries, and it came out great. On the second loaf, the dispenser failed to dispense. I called in to Breville, and the advisor asked me a few questions, and quickly decided TO REPLACE IT WITH A BRAND NEW MACHINE. I didn’t even have to pay for shipping, or for shipping the old one back to them. After some horror stories about wrestling with the company this amazed me. Braville really stands behind their products. They have made correcting this issue totally effortless. All I had to do was give them my credit card number to hold until they receive the old unit back, and I’ll be taking the old unit to UPS for packing and shipping. I am delighted with Breville and can strongly recommend them and their product. I also ordered a spare bin and paddle, which arrived quickly and with no problems.
