HOW TO USE AND CARE FOR YOUR ROASTER OVEN 1. Unpack your Nesco Roaster Oven completely and remove all packaging material and information labels. Place the Roaster Oven in a well ventilated area on a heat resistant surface. Set the control dial to its minimum setting. Plug the cord into a 120 volt AC outlet. Return control to maximum setting (450-degrees F). Operate the Roaster Oven empty (without the cookwell or cover) for approximately 60 minutes, or until any odor or smoking disappears. Some smoke and odor are a normal part of “curing” the element and will not reoccur in cooking use. When curing is completed, turn the temperature control to its lowest setting, unplug the unit from the electrical outlet and allow to cool. 2. Wash the cover, cookwell and rack in warm sudsy water, then rinse and dry. Refer to complete cleaning instructions in manual. 3. Non-stick cookwell: When ‘curing’ your Roaster Oven with a non-stick cookwell, we recommend that it be operated with cover and cookwell. Do this in a covered outside area or other well-ventilated area. After curing and cleaning, and before cooking in your non-stick cookwell for the first time, lightly coat the interior of the cookwell with vegetable oil.
HELPFUL HINTS Preheat roaster oven for 20 minutes. Roasting meat in your Nesco Roaster Oven keeps it moist and tender. For additional browning, you can add 1 tbsp. browning sauce to oil and brush over skin before roasting. To sear meat, preheat Roaster Oven at 450-degrees F. Add margarine. Cover, then sear meat for 10 to 15 minutes per side until lightly browned. Stir ground meat once. Time will vary depending on the quantity of meat. Alternative browning method for self-basting turkeys, preheat at 400-degrees F for 20 minutes. Roast bird for 1 hour at 400-degrees F. Reduce heat to 350-degrees using included time chart, 13-18 minutes per pound. During last hour of roasting increase temperature to 400-degrees and remove all excess juices in bottom of cookwell.

Mixed feelings on this one.I was looking for at least an 18 quart roaster for a large turkey and a large slab of corned beef that I have. I chose the Nesco roaster because of the long-standing name and the many positive reviews. The first one that I got had a defective foot and it wobbled. It looked like the foot had been put on an angle. I returned that one to Amazon for replacement. The second one was better, but had a mark on the back that I couldn’t remove. Oh well, perfection isn’t something that comes will most new appliances. So I tried it.My first use was a large slab of corned beef. I have cooked many corned beef dishes from the store, but this was one we got from a local farmer and it was larger than I could fit in any of my Dutch ovens. For the size, I figured 5-6 hours on slow cook high. I had no idea how long it would take to get the water to a boil. I put the corned beef into the roaster and not quite covered it with water. The water was not cold, but not boiling either. It took well over 2 hours to get the water to 200 degrees. This was my first disappointment because it pushed our dinner back a couple of hours. It did seem to hold the temperature well once it got there – even when I added the vegetables later. I had it set at 250 degrees to maintain a slow simmer. The meal came out well, but the corned beef was more stringy than others I have cooked in the past. At this point, I don’t know if it was the cooker or the corned beef.After the meal was done, there was the clean-up. I am a stickler about getting things clean with no marks from cooking. With only a water based dish, the porcelain surface was not easy to clean. It took multiple tries with scrubbies to get off the marks from the water .I was going to return the cooker until I took a closer look at other cooker of this size. Most don’t even have a light to indicate the cooker is to temperature. Most of them also seem to have the same porcelain coating. At least this one has that has a light that indicates it is on and has reached the set temperature. I also bought the stainless cookwell, and hopefully this one is easier to clean. I opted to keep this roaster oven be cause of the indicator light that others don’t have and, from feedback on other units, it isn’t worse than any others. It is also possible that is didn’t quite measure up to the Ninja 3-in-1 cooking system that I have. Unfortunately, that one doesn’t come in larger capacities. It’s very possible that my disappointment in this oven is because I used one with more bells and whistles first. Also, the amount of water added to cook the corned beef was quite a lot. Even so, I don’t think it would have taken over 2 hours to heat to boiling on the stove top.My next project with this roaster is to roast a large turkey. I will update this review after I do that. It may be much more effective for its roasting abilities.Update:I did purchase the stainless steel cookwell, and it made a world of difference in the cleanup. The stainless steel is so much easier to clean than the porcelain. I did roast a 17 pound turkey in this cooker following the instructions I found on a web site to roast at a higher temperature to brown and then turn the temperature down for the remainder of the cooking and not open the cover to check. I used a probe thermometer to monitor the temperature so I didn’t have to open the cooker. When it was done, the turkey tasted excellent and moist, but it was not at all browned. Maybe some of the newer self-basting lids on other oven cooker work better for browning.

Powerful enough to slow cook in an unheated garage.I like this Nesco 4816-14 Roaster (6 quart). I like to slow cook foods over many hours but I also like to make them flavorful which also makes them quite aromatic. A slow cooker in our house overwhelms me with strong aromas for hours and hours. It smells good for about the first 20 minutes but then I crave relief! I wanted to move the process to our separate unheated garage but a standard slow cooker didn’t have enough power to maintain a 250º temperature when it was cold outside. So, I took a chance on this roaster. Sure enough, the instructions indicated that it is capable of doing just what I wanted to do by specifically mentioning in the instruction booklet that it is suitable for use in a garage. I’ve only used it twice so far but it worked great. One day had temps in the 20’s but the Nesco roaster maintained a 250º temp in our closed garage. Now, I can go crazy with onions and spices and let it cook away for hours with total disregard for any persistent strong aromas. To me, the food tastes better when I haven’t been forced to smell it all day or night.Nesco claims it has that “circle of heat.” I presume they are the only ones? I don’t know. But, it certainly seems like a great idea that will keep me loyal to the Nesco brand. It means that the heating elements aren’t on the bottom so as to cause burning of the food. Nesco says their heating elements encircle the cooking area from the side so there’s less chance of burning.The cookwell is black porcelain. It cleans easily if you soak it and this one perfectly sits diagonally submerged in our standard sized kitchen sink. Nesco warns that, as porcelain cookware is known to do, it will discolor a bit where liquids and such touch the material. Even on the first use, the cookwell developed a cloudy “ring” at the liquid level and there were immediately some cloudy spots where drips of liquid had contacted the cookwell. They say it’s only cosmetic. I guess that is so. It still cleaned up easily after soaking. I have to admit, I’ve got some black porcelain roaster pans for my gas oven that have also discolored in the same way. They’ve been fine for years so I’m not worried about the Nesco cookwell.I would purchase an upgraded model, however, if it was offered in stainless steel with a stainless steel cookwell. I like stainless. If I’m in a hurry, I don’t have to wait for a soak. Stainless steel lets me immediately go to work with scrapers and a stainless steel scrubbing pad and get the job done quickly. You can’t use anything but plastic scrubbers on porcelain, so, porcelain requires that soak time.There is a stainless steel roaster with a stainless steel cookwell in the Nesco product line but it is 18 quarts. That’s too much for many of the small meals and roasts that I prepare. A bigger roaster requires a lot more broth and other ingredients to accomodate the larger size of the roaster no matter what quantity of food you may wish to cook. I do more “moist” cooking with liquids over a long period of time than purely “roasting” with dry heat.This Nesco 4816-14 Roaster (6 quart) uses about 600 watts. That means my electric garage door opener won’t blow a fuse while the roaster is operating. Nice.(I keep repeating the model number because Amazon and blogs that plagiarize these reviews will sometimes jumble reviews for one product into another product’s reviews. I’m trying to help keep this review identifiable.)

Better Than A Slow Cooker or Crock PotI’ve used and gifted this Nesco and the large one for 20+ yrs. The temperature control, easy cleaning and replaceable ceramic lined cooking well make the Nesco cookers a must have in every kitchen.I love that the cookwell is not heavy like the crockpot slow cookers. Easy on your back! It’s versatile. Perfect for entertaining and doesn’t take up alot of room on your buffet. (They look nice too!) Many times I’ve prepared food in my Nesco and transported it all to parties and luncheons and served warm. These are great year round. I use the Nesco year round. They’re great in summer when you don’t want to use your oven and heat up your house. Keeps our A/C bill down! It cooks as well as my gas range oven. I prepare roasts,, casseroles, side dishes (Mac n Cheese, Potatoes dishes etc); all are cooked thoroughly.I bought a new one only because my kitchen decor changed. I’ve bought them for college students. They love them. I gifted my daughter both the large and the 6 qt in 2000. She’s still using them. The price is great because they last for decades.

Best Roaster in the world!People I have to tell you this is one of the best cooking elements you will ever spend money on. I’ve cooked up to 15 lbs of Roast Beef in it and, after I seared the meat (eye roasts) in a pan on my cooktop surface…then I transfered it to the already heated cookwell(which is NON-stick) you can spray w/ cooling product for extra measure; but, I promise you the meat cooks to perfection set at either 350 degrees or higher (I started my cooking process our at 400 degrees, then lowered it after 2 hours to 350). I let the meat cook for almost 5 hours this way. Then I let it rest to a cooling temp. Do not take this amount of meat OUT OF THE pan…chill over night by lifting out the cookwell and place in your fridge. Next day, Bring the meat back to the Roaster, set in the cookwell containing the meat….and resume cooking at 350 for two (2) hours. Take the meat out, let rest for 30 minutes and slice w/electric knife (it will be so tender, using the electric knife helps cut the meat WITHOUT any breakage). Have an 8 to 10 quart heavy pan on the stove ready to pour the strained gravy into it, and then the sliced meats. Let cook on med-low for a couple hours. Periodically, check the meat as it cooks in the cookwell, as you will need to add water to your meat/gravy which will make it even MORE tender.**As with ALL recipes, use the initial ingredients in preparing the meat, and the condiments etc., you know what you like and put them in the juices (mushrooms, onions, etc.The reason I wrote this particular recipe for you is to point out that with this roaster you can do meats, turkeys, pork roasts etc….for large groups (and with SUPER BOWEL coming up, you will not do the work…the Nesco will do it for you. ALSO, all the side dishes you want to serve, you can put at least 4 cups of water in the clean cookwell, and set your 3 pans inside on a warm temp 200-250 to serve warm/hot to your guests. You will be a relaxed cook while your guests think you killed yourself all week long. I love my Nesco roasters, I have two 18″ ones, two 6 quart ones, and use them at different times for different things. I personally like “Nesco” because it is the only company that has the “Circle of Heat” trademark…which is what you pay for in a Convection oven. Vary your recipe, mine is just what I like and use. I get plenty of compliments when I make this..and you will too.CookingGirl

A feel-good pleasant surpriseMy daughter’s oven went out just before Thanksgiving. I initially ordered the 22qt size of another brand and kept seeing this beautiful red roaster pop up on every page. I switched my order to the red 18 qt Nesco and was informed that it would not arrive until mid-December. I went ahead and ordered both thinking we could cook Thanksgiving dinner in the other brand that I would gift to my daughter and I would then keep the red Nesco for myself. Right after ordering I was informed that Amazon was able to ship the Nesco and it was now on its way scheduled to arrive the day before Thanksgiving. Needless to say, my daughter and I both decided on the gorgeous Nesco (a little higher in price) and I am returning the other brand after barely looking at it. I have to order another one for myself. My daughter’s place is small so we set it up in the garage which worked well for the initial burning off of any odors as well as keeping it away from children’s fingers. I used the recommended roasting bags which definitely helped with cleanup, but some of the bag melted onto the side of the pan. I had to soak an almost-clean pan after dinner in order to peel off the plastic bag residue. There was no damage to the cookwell and I only used a sponge and my fingers. I could only think that perhaps the meat shifted when carrying the cookwell with the ham out to the garage and inadvertently ended up cooking the pan liner to the side of the cookwell. The ham turned out great, a pleasant surprise for first-time use of a new appliance and there was lots of room for veggies (10 lb ham). The next day we cooked a large casserole for breakfast and had NO cleanup of the cookwell at all. I got rid of all my larger crockpots and crowd serving appliances when the kids were grown, but I am looking forward to using this one for potlucks at work, church and holidays. It’s also just a “feel-good” color. If my daughter lived closer I’d probably just borrow hers, but I am lookong forward to having my own. A side note is that the cook-well feels like baked-on enamel but without the threat of chipping. (I am not sure what the coating is called, but I liked it).

Cooks decent, but sub-par fit and finish.I had my eye on a Nesco roaster for several years. I finally made the purchase and have mixed feelings on this appliance. Funny how they advertise this as the roaster Grandma had and everyone remembers. No, it isn’t. Nesco used to manufacture these in America, and they were heavier and better made. I purchased the stainless model, and it was evident right out the box there were quality issues. The heatwell is the black porcelain part which is mated to the housing. On mine, on the right side this heatwell was more flush with the housing (1st pic). But on the left side, you can clearly see there is a noticeable gap and poor forming (2nd pic). And in both photos, you can see fibers of the insulation sticking out from underneath the edges. This is nothing short of substandard manufacturing coupled with poor quality control. I thought, “I’m not happy about this, but as long as it doesn’t affect the performance, I can live with it.” So the next test was cooking. I did the ‘burn in’, which is covered in the manual. One hour on the front porch and it was done. The smoking actually ceased within 15 or 20 minutes, but I went the full hour as recommended. For the cooking, I put a spice rub on a 5-lb. hen and followed the instructions. In about 2 and half hours, I was rewarded with one of the best, juiciest roast chickens I’ve ever had. Not dry or stringy, and perfectly cooked from top to bottom and front to back. So there it is, in a nutshell. C- minus for fit and finish, but a solid A+ for cooking. Nesco has a good product, but I wish they would work on the materials and overall quality.

LoveI love this! It was difficult to find locally as we lost ours in a house fire 1/1/2021. Apparently, everyone was cooking or they are not making as many. Ours came with a few nicks in the red paint, but we needed to use it right away.
