If you have large hands like me that’s the Knife. For people with smaller or small hand this may not be it. Love the transition from the handle to the knife its perfectly shaped for my hand. It has some weight to it which is fine with me, but it’s well balanced.

I have been a cook in the industry for years and know that may times you just don’t have to pay for a name brand if you want a good quality knife. This one has the steel quality I wanted: it keeps a good edge but I can still sharpen it on a stone and hone it sharp with a diamond steel. That said, I found I did not like the bolster like I thought I would, as I felt like my finger would slide down to the back edge of the knife. My mistake. I thought it looked more comfortable (and it was) but I had less control than with a squared off bolster.
My Executive Chef commented that he liked the knife as he was using the flat side of the blade to mash garlic I had just minced. Now here’s the thing: it was great for that because it’s got a thick, heavy feel and weight to it. I also have to slice seared Ahi tuna with it. Want to do that, get a thinner knife. Want an all purpose one that has a bit of heft, this is a good one.
