Forging together 46 layers of Damascus steel with with a Nickel VG-10 Gold high-carbon steel core, our knives are hammered to create a finish known as (“Tsuchime”), which is as elegant as it is functional, preventing food from sticking to the blade. Handcrafted natural magnolia wood is beautifully polished and hand attached in the traditional Japanese style of the blade. A bolster made of Water Buffalo horn is affixed between the handle and blade. Beautifully polished, color and shade may vary.
Tsuchime which is Japanese for “hammered” is the hand hammered finish that creates a beautiful pattern that functions as a traditional form of granton indentations which prevents the sticking of food to the sides of the knife. Attention to DetailYou know something is about to be really good when you have to peel back like 20 layers of very neat and symmetrical packaging. The first of three foam sheets was wrapped and folded carefully around the box and taped perfectly in the center. The box is textured black and gold flake for the lettering. The knife speaks for itself. Gorgeous. Light. Balanced. 8/10 edge out of the box. Blade is strait and centered. The saya is a little loose but does the job of protecting the blade. I would absolutely buy another. Love it.

Great knife for a starter looking to get into japanese damascusVery beautiful knife and an enjoyable unboxing. The things I dont like about this knife is that the bevel is at an 80/20 grind. It is double beveled, but most of the edge is on one side. Its definitely a learning curve to sharpen, which leads me to the fact that it did not come crazy sharp out of the box. 20 minutes on my whetstone made it way sharper than the factory edge. Last the spine is very thick, when I cut a potato it kind of wedges it apart instead of slicing even though its sharp. Overall a great knife besides these few points. The saya is nice, it feels very durable. The handle is comfortable to hold. I would still recommend this knife to people.

Just Buy This Amazing Knife!I bought the 8.3 inch knife. Absolutely love the razor sharp blade, beauty, and craftsmanship. Wonderful customer service, too. Mine was hand delivered today. I just learned that I live only 3 miles nearby the store so I will be going there very soon to drop off all my knives for high quality Japanese whetstone sharpening and cutlery shopping. Goodbye Williams Sonoma and Sur La Table for knives! Yoshihiro Cutlery is now my go to cutlery store. For people who say the price is too high – high quality products and services are absolutely worth the cost. Highly recommend!

Excellent bladeI have been using this knife in the kitchen for a couple weeks now and could not be happier. It’s light weight makes hours of work much easier. As a chef I could not recommend this knife more. The extra $19.99 for shipping is total BS!! this company should change that policy ASAP. It was just a small simple box and the extra charge is just childish and unprofessional.

This knife is worth the moneyThis is a amazing knife. 10/10 would buy again. I use it every single day at work in a fine dining restaurant and it’s never let me down. Perfect for literally every cut. Looks great, feels great, it is great. I would 100% recommend this knife to anyone that can afford it and works in a professional manner. This is NOT a knife for the house, there are many much more affordable options for home cooking. For work environment this is perfect! The edge keeps extremely well, especially if you do regular maintenance on the bevels with a honing rod. It’s resilient and keeps up with my workload (150-300 covers a night).
